Truffled Farmer's Pizza
Preheat oven to 425° F. Place dough in a bowl with olive oil. Allow to rise for 30-45 minutes in a warm place until the dough at least doubles in size. On a lightly floured surface, roll out dough to desired thickness. Place dough on parchment-lined sheet pan, sprinkled with cornmeal to keep dough from sticking. Brush the top of the dough with olive oil. Sauté arugula in truffle butter until wilted, reserve. Layer fresh tomato and sautéed arugula over dough. Top with farmers cheese. Bake for 12-18 minutes, until crust is golden brown and cheese is browned and bubbly.
