Southwest Corn and Pumpkinseed Salad

1 bunch
Cilantro (washed and diced)
4 Ears Corn (fresh, grilled, and cut from the cob)
2 pounds
Orzo (boiled off and let dry)


Cook off orzo in fresh salted water. Do not rinse pasta when done. Strain and let dry on a sheet pan. Place pasta in a large bowl. To the pasta, add sliced sundried sweet peppers, pumpkin seeds, sliced grilled cipollini onions, olives, corn, cilantro, and cheddar cheese. Dress with the pumpkin seed oil, salt and pepper to taste.
