Smoked Duck Breast Topped Somen Noodle Cakes
Preheat oven to 450° F. Bring pot of water to boil off somen noodles for 45 seconds and stir constantly. Strain noodles from water, rinse and cool right away. When all the water is strained from noodles add sesame oil, 1 quarter cup of chopped scallions, salt, pepper, eggs and corn starch. Mix well. In a large sauté pan add 1 tablespoon of canola oil and place noodle mixture into a pan and form into a large cake. Cook until golden brown. Flip cake over and cook the other side. In a baking dish, roast duck breast for 15 minutes. Let rest and slice thin. Place duck breast on top of noodle cake, and garnish with scallions. On the noodle cake place micro wasabi, sliced duck, then drizzle a little soy glaze on top.
