Miso Soup with Tofu

Recipe type: Soup



1 gallon
Cold Water (For Dashi Stock)
3 1⁄2 ounces
Bonito Fish Flakes (For Dashi Stock)
Block Firm Tofu (cubed)
6 tablespoons
Miso (6-8 tbsp)
2 bunches
Scallions (thinly sliced)
2 cups
Fresh Shiitake Mushrooms (thinly sliced)


To Make Dashi Stock:  Put water in a stock pot and heat. Just before the water boils, add bonito flakes. When the water boils, skim off any foam that rises to the surface. Stop the heat and strain through a fine mesh.

Return stock to a pan and bring to a boil. Add the cubed tofu and sliced shiitake and simmer for a few minutes on low heat. Remove 1 cup of broth from the pan and dissolve miso paste in it. Gradually return the miso mixture to the soup. Stir soup and taste, add more miso if desired. Stop the heat and add chopped scallion. Remember: do not boil soup after you have added the miso.
