Local Hard Wheat Berry and Baby Spinach Salad

8 ounces
Sundried Red Sweet Peppers (julienned)
12 ounces
Baby Spinach
2 cloves
Garlic (fresh)


In a sauté pan, brown garlic in 1 oz. of olive oil. When garlic is brown, add spinach and sauté until wilted. Strain spinach to release all of its water. In boiling water, cook off wheat berries until tender. Do not salt water, this will break the berries apart. Strain wheat berries but do not rinse. Allow the wheat berries to cool. Fold in sautéed spinach, dried strawberries, dried red peppers, and the remaining olive oil. Add salt and pepper to taste.
