Local Delicata Squash with Jansal Valley Peppered Bacon

Delicata Squash
Large Sweet Onion
1 tablespoon
Fresh Sage (chopped)
1 ounce
Lemon Honey
2 ounces
Maple Butter
3 tablespoons
Extra Virgin Olive Oil
2 bunches
Rainbow Swiss Chard
1 teaspoon
Salt & Pepper (to taste)
2 ounces
White Verjus


Preheat oven to 400°F. Cut squash in halve and seed. Cut squash into half moons,1/4” thick. Slice onion and Swiss chard thinly. Chop bacon into small pieces. Toss squash with olive oil, salt and pepper. Place on a sheet pan and roast until tender, approx. 15-20 min. Heat the bacon in a sauce pan for 3-4 minutes. Add onion, garlic and chard, toss together. Add the white verjus. When the squash is finished, combine with the other ingredients. Season with salt and pepper.
