Jansal Valley Cranberry Banana Bread

Recipe type: Breakfast



1⁄2 cup
Organic Butter Unsalted (to be melted)
1⁄2 cup
Fresh Cranberries
1 teaspoon
Ground Cinnamon
1 1⁄2 cup
All Purpose Flour
1 teaspoon
Baking Soda
1⁄2 teaspoon
Kosher Sea Salt
Ripe Bananas
1 teaspoon
Vanilla (extract)
3⁄4 cups
Brown Sugar
1 dash
Honey Butter (as desired for topping)


Preheat the oven to 350º F. Grease and lightly flour an 8 x 4 loaf pan or desired baking pan. Chop the cranberries and walnuts and set aside. Melt the butter and then allow it to cool.

In a large bowl mix together, cinnamon, flour, baking soda and salt. In another bowl, mash the bananas until almost smooth and mix in the vanilla extract, melted butter, eggs and brown sugar until well combined. Lightly fold in the flour mixture and mix until there are no longer any dry lumps. Next, fold in the cranberries and walnuts and pour into the pan. Bake for approximately 55-70 minutes or until a toothpick comes out clean.  Cool.  Drizzle with Honey Butter before serving.
