French Mustard and Herb Roasted Potato Salad

Rainbow Marble Potatoes
2 tablespoons
Extra Virgin Olive Oil
1 tablespoon
Tarragon Wine Vinegar
1 tablespoon
Italian Parsley


Preheat oven to 400° F. Scrub potatoes under running water to remove dirt, then halve or quarter to create a uniform bite size. In medium sized bowl, toss potatoes with 1 tablespoon of olive oil, 2 tablespoons of mustard and herb blend, salt and pepper. Roast in the oven for 30 minutes on a foil or parchment-lined baking sheet. Remove from oven and toss with remaining olive oil, mustard and herb blend, and tarragon vinegar. Sprinkle with fresh parsley, serve, and enjoy.
