Chicken Basil Sausage and Cannellini Bean Soup

1 package
Chicken Sausage with Handpicked Sweet Basil (cut into small chunks)
Medium Onion (medium dice)
Medium Carrots (chopped small)
Stalks Celery
1⁄4 cup
Fresh Italian Parsley (chopped)
16 ounces
Cannellini Beans (soaked in water overnight)
1 pound
Plum Tomatoes (diced, or 1-14 oz. can Diced Tomatoes)
2 1⁄2 quarts
Low Sodium Chicken Broth
3 tablespoons
Extra Virgin Olive Oil


Add olive oil to a large stock pot on medium high heat. Add chicken sausage and sauté for 5 minutes. Then add carrots, celery, onion, garlic and red pepper. Cook until vegetables are soft. Add broth, basil, tomatoes and ½ of the beans. With a fork, mash remaining beans and add to soup for texture. Bring to a boil uncovered, add fresh parsley and simmer for 30 minutes, covered.
