Blueberry Amaretto Buckle

Fresh Local Blueberries

A buckle is a cross between a cake and a crumble and is distinguished by both its single layer and use of berries. Our buckle doesn’t have a streusel-like topping, so that the individual flavors of our local blueberries and Jansal Valley Amaretto Honey can shine through.

Pre-heat the oven to 400º F. Melt the butter in a sauce pan, then mix flour, sugar, egg and honey together in a large mixing bowl. Add the melted butter slowly until incorporated. Whip on a high level for one minute. Next, place the blueberries in a 9” baking pan. Pour the flour and sugar mixture over the blueberries until well-coated and bake for about 50-60 minutes. Let cool and serve.
