Artisanal Cheese, Pepper Bacon and Macaroni Bake

12 ounces
Krystal Pure Cave Aged Cheddar (plus assorted cheeses, to total 12 oz)
1 package
Pasta (boil off, let cool, do not rinse)
1⁄2 gallon
Whole Milk
8 ounces
All Purpose Flour


Preheat oven to 350° F. Render bacon in a large sauce pan. When bacon turns golden brown remove bacon, add butter and let melt. To the butter add flour and cook over low flame for about five minutes. When flour is cooked, add cold milk and stir until smooth. Cook over low flame until milk starts to thicken. When milk starts to thicken, add cheese and stir constantly. Add salt and pepper to taste. Add the pasta to the milk and cheese mixture and place in a large casserole. Bake for about 35 minutes.
