Southcoast Farms® Rocky Mountain Ash Goat's Milk Cheese
This exceptional cheese starts with only morning fresh goat's milk from local farms near our artisan cheesemaker's farm. The milk is turned into curd and then mixed with vegetable ash and formed into rounds. The aging is done in a humidity-controlled room allowing the natural bloomy rind to form. Once ripe, this cheese has a creamy texture and elegant, tangy flavor with hints of smoke from the ash. Pair this unique cheese with dry white wines and ripe stonefruit for the perfect end of to a lavish dinner.
