Yellow Split Pea & Pepper Bacon Soup

Ingredients

Large Carrot (peeled and diced)
4  
Ribs Celery (diced)
   
Large Onion (peeled and diced)
1⁄2 gallon
Chicken Stock

Instructions

In a stock pot sauté bacon until golden brown. Render bacon over a low flame so as not to burn the bacon fat. In the bacon fat, sauté vegetables until soft. When the vegetables are soft, add chicken stock and split peas. Cook over a medium flame, about 45 minutes, stirring often to prevent the peas from falling to the bottom.
