Savory French Mustard and Herb Crepes with Red Pepper Pesto
Place a metal mixing bowl in the freezer for 5 minutes. Remove bowl from freezer and whisk mascarpone, mustard and herb blend, mustard, and parmesan together. Divide mixture evenly among each of the 4 crepes by placing a spoonful in the middle of the crepe and spreading into an even layer, then roll crepe into desired shape (reserve a small portion of filling for garnish). Pour pesto and buttermilk into a squeeze bottle and shake vigorously. Drizzle pesto over crepes, place a dollop of filling in the middle of each crepe and sprinkle with fresh parsley.
