Roasted Potato Salad with Bleu Cheese Dressing
Preheat oven to 375° F. Chop potatoes, place in a bowl. Toss with hot smoked paprika, olive oil, salt and pepper. Place on a sheet pan and bake for 25-30 minutes, or until tender. Slice celery and onion, chop herb, and combine with potatoes. Toss with bleu cheese dressing, and serve.
