Radicchio, Walnut and Smoked Gouda Salad

Heads Trevisano Radicchio
4 cups
Baby Lettuce
3 bunches
Chives (finely diced)
1 1⁄2 cup
Smokeshack Gouda (grated)
2 tablespoons
Champagne Mustard
Salt & Pepper (to taste)


Place Smokeshack Gouda in freezer for a few minutes, until ice cold. Trim bottoms off radicchio and separate into small spears. Mince chives. Whisk together olive oil, champagne mustard, and vinegar, then add chives. Place radicchio in a bowl with baby lettuce. Grate Smokeshack Gouda, sprinkle over salad with walnuts. Toss with dressing and serve. Check for seasoning.
