Italian Couscous Porchetta Salad

Ingredients

6 ounces
Roasted Red Peppers (cut into strips)
1 package
Italian Couscous
4 ounces
Fondo di Toscana Prosciutto di Parma (cut into strips)
6 ounces
Fondo di Toscana Porchetta (cut into pieces)
6 ounces
Gruyere Cheese
4  
Ribs Celery (diced)
1  
Large Red Onion (diced)
2  
Cucumbers (peeled and diced)
8  
Leaves Basil (chiffonade)

Instructions

Boil off Italian couscous. Strain, but do not rise. Place on a sheet pan and let dry. In a large bowl, place all vegetables, cheese and meats. Combine with the Italian couscous, and dress with the olive oil and vinegar. Season to taste.
