Fava Bean Pesto Crostini with Balsamic Glaze
Remove fava beans from their pod. Measure 2 cups of beans into a blender or food processor. Pour in minced garlic and grated pecorino, Mix the ingredients at a high setting, while slowly pouring in the olive oil. The mixture should form a pesto0like paste with a nice sheen from the olive oil. If the mixture seems to chunky, add a touch more olive oil. Place the mixture into a bowl, add the lemon juice and heirloom tomato salt, and stir together. Spread the mixture onto the toasted bread, plate, and drizzle the balsamic glaze on top of the crostini. Serve and enjoy!
