Fondo di Trebbiano® White Balsamic, Aged 4 Years
This extraordinary white balsamic starts with fresh pressed Trebbiano grape juice that is strained to remove any skin or seeds from the grapes. This straining process is what gives this balsamic its beautiful dark golden color. The juice is then placed in "piccolo" or small oak barrels with specially selected cultures that gently ferment the juice into vinegar over a period of four years. This small barrel aging produces a vinegar with vibrant acidity and sweet flavor with hints of vanilla and smoke. Use this vinegar to add flavor to roasted fish and vegetables or to add a zesty flavor to fresh cut fruit and salad. This balsamic vinegar can also be used in pastries such as custard and sabayon and salads.
