Fondo di Toscana® Ricotta Salata
Fondo di Toscana® Ricotta Salata is one of Italy's most unusual and least understood pasteurized sheep's milk cheeses. The milk curds and whey used to make this cheese are pressed and dried even before the cheese is aged for two months. This process gives it a pure white exterior along with a dense texture. It possesses a salty, milky flavor similar to a wonderfully dry Italian Feta.
