Fondo di Toscana® Fromaggio di Fossa
This "Fossa" cheese (which means "well" in Italian) is a traditional cheese among the people of Tuscany. It first ages for 70 days in the cellars of the actual homes of the cheese producers. It is then placed in a strong cloth bag. These bags are placed in wells and matured with the natural soils and climate of the region. Our Fromaggio di Fossa is a limited production, pasteurized sheep's milk cheese that is exclusive to Sid Wainer & Son®.
