Fondo di Toscana® Eggplant Caponata
Fondo di Toscana® Eggplant Caponata is a traditional Mediterranean vegetable mix made up of onions, peppers, eggplants, olives, and zucchini. Today it is used as a side dish or appetizer, but prior to the 18th century it was accompanied by bread and served as a main course. Fondo di Toscana’s traditional Sicilian recipe calls for a slow cooking of the vegetables in garlic and olive oil. The addition of tomato sauce, wine vinegar, spices and herbs give the product its classic sweet and sour taste. Serve with grilled meat dishes, roasts, and stews or try the classic combination of caponata and toasted Italian bread.
