An early version of table mustard, this spice can be found going back to the Middle Ages when it was ground and put into wine. Originating from the cabbage family, black mustard seeds, along with brown, have the strongest flavors. Commonly used in making chutney and pickles. When cooking, add toward the end and heat gently.
