In the Poitou-Charentes region of France, there are several goat breeders who still make pasteurized goat's milk cheeses in the traditional method. These methods have been used and perfected by the goat breeders since the end of the 19th century. Chevre Magnifique is a soft cheese with a bloomy rind and an exceptional flavor. It is cellar-aged for three weeks to develop the intense goats' milk flavor.
