 Once considered an indispensable part of a refined dinner in Europe, the artichoke is recognized today not only as a delicacy but as a healthful, versatile addition to a variety of dishes. However, the quality of the artichoke can make or break a recipe. The product has a plethora of uses. French artichokes are used in salads, side dishes, pasta, rice or risotto. A popular dish from Tuscany is bruschetta, bread and heavily layered with artichoke paste, slices of Parmigiano - Reggiano and slivers of vine - ripened tomatoes drizzled with a touch of olive oil. They can be sold individually for about $1.50 each or by the pound in the $13.95 to $14.95 range.
