Once considered an indispensable part of a refined dinner in Europe, the artichoke is recognized today not only as a delicacy but as a healthful, versatile addition to a variety of dishes. However, the quality of the artichoke can make or break a recipe. Fondo di Toscana Artichokes, an authentic product from Tuscany distributed exclusively by Sid Wainer & Sons Specialty Produce & Specialty Foods, is renowned among foodservice professionals and gourmet retailers for its firm texture and consistent quality. The product has a plethora of uses. French artichokes are used in salads, side dishes, pasta, rice or risotto. A popular dish from Tuscany is bruschetta, bread and heavily layered with artichoke paste, slices of Parmigiano - Reggiano and slivers of vine - ripened tomatoes drizzled with a touch of olive oil. The vegetable also makes a wonderful appetizer - simply slice and fan decorative plate. The artichokes are easily repackaged for retail and are currently sold in upscale delicatessens, on top of the case, in large jardinière or displayed in decorative bowls in the cheese department. They can be sold individually for about $1.50 each or by the pound in the $13.95 to $14.95 range.
