ARTFUL ARTICHOKES
If you’ve ever been to Italy (particularly Tuscany) then you know the importance of the artichoke in the Italian diet. Along the Mediterranean, from the regions of Tuscany, Lazio you and Luguria south to Puglia, Sicilia and Sardegna, you’ll find one of the richest artichoke producing regions in the world. Artichokes are planted in the fall and spring. Harvest begins within the first ten days of October and ends in June.
These Fondo Di Toscana Tuscan marinated long stem artichokes from Sid Wainer & Sons won the Outstanding Foodservice Award at the 98 Summer Fancy Food Show. The company it expanding its line of marinated vegetables because demand for them is growing, says company president Henry Wainer. New products include smaller-size retail packaging for the artichokes, grilled cippolini onions (a flat, white Italian onion) and grilled artichokes.
